- 1 teaspoon pure vanilla extract
- ½ teaspoon ground cinnamon (plus more for dusting, optional)
- 2–3 tablespoons granulated sugar, maple syrup, or agave nectar (adjust to taste)
- 1–2 tablespoons neutral oil or vegan butter, for cooking
- Optional toppings: maple syrup, fresh berries, sliced bananas, powdered sugar, vegan whipped cream
Instructions
- Prepare the Batter: In a shallow dish or pie plate, whisk together the plant-based milk, cornstarch, nutritional yeast, vanilla extract, cinnamon, and sweetener until completely smooth and lump-free.
- Soak the Bread: Gently place one slice of bread into the batter, allowing it to soak for 15-30 seconds per side, or until thoroughly saturated but still holding its shape. Let any excess batter drip off.
- Heat the Pan: Heat a large non-stick skillet or griddle over medium heat. Add 1 tablespoon of oil or vegan butter, ensuring it coats the surface.
- Cook the French Toast: Carefully place the soaked bread slices onto the hot pan, making sure not to overcrowd. Cook for 3-5 minutes per side, or until beautifully golden brown and cooked through. Add more oil/vegan butter as needed for subsequent batches.
