  • 1 cup uncooked brown or white rice
  • 2 cups water (for rice)
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 large avocado, diced
  • 1/2 cup salsa, your favorite kind
  • 2 tbsp fresh lime juice
  • 1/4 cup fresh cilantro, chopped (optional)

Instructions

  • Preheat oven to 400°F (200°C).
  • Toss cubed sweet potatoes with olive oil, cumin, chili powder, paprika, salt, and pepper. Spread in a single layer on a baking sheet.
