Ingredients
- 3 cups fresh or frozen (thawed) corn kernels
- 1/2 red bell pepper, finely diced
- 1/4 red onion, finely diced
- 1 jalapeño, seeded and finely diced (adjust to taste)
- 1 cup cherry tomatoes, halved or quartered
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons extra virgin olive oil
- Juice of 1 large lime (about 2 tablespoons)
- Zest of 1 large lime
- 1/2 teaspoon kosher salt, or to taste
- 1/4 teaspoon black pepper, or to taste
Instructions
- 1. Prepare Ingredients: If using fresh corn, cut kernels from the cob. If using frozen, thaw and pat dry. Finely dice red bell pepper, red onion, and jalapeño. Halve or quarter cherry tomatoes. Chop cilantro. Zest and juice the lime.
- 2. Combine: In a large bowl, combine corn, red bell pepper, red onion, jalapeño, cherry tomatoes, and cilantro.
- 3. Dress and Season: Add olive oil, lime juice, and lime zest to the bowl. Season with kosher salt and black pepper.
- 4. Mix Gently: Gently fold all ingredients together until well combined.
- 5. Chill: Cover and refrigerate for at least 30 minutes to allow flavors to meld. Taste and adjust seasoning before serving.
