Ingredients
- For the Crumb Topping:
- 1 cup (120g) all-purpose flour
- 1/2 cup (100g) packed light brown sugar
- 1/4 cup (50g) granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup (113g) unsalted butter, melted
- For the Cake:
- 1 1/2 cups (180g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 1/2 cups (about 3 medium) very ripe mashed bananas
- 1/2 cup (100g) granulated sugar
- 1/4 cup (56g) unsalted butter, melted
- 1/4 cup (60ml) vegetable oil
- 2 large eggs
- 1 teaspoon pure vanilla extract
Instructions
- 1. Prepare Crumb Topping & Pan: Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan. In a medium bowl, combine flour, brown sugar, granulated sugar, cinnamon, and salt for the topping. Pour in melted butter and mix with a fork until coarse crumbs form. Set aside.
- 2. Mix Wet Ingredients: In a large bowl, mash ripe bananas. Add granulated sugar, melted butter, vegetable oil, eggs, and vanilla extract. Whisk until well combined.
- 3. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- 4. Form Batter: Gradually add dry ingredients to wet ingredients, mixing with a spatula or wooden spoon just until no streaks of flour remain. Do not overmix.
- 5. Assemble & Bake: Pour batter into the prepared pan and spread evenly. Sprinkle crumb topping generously over the batter. Bake for 35-45 minutes, or until a wooden skewer inserted into the center comes out clean.
- 6. Cool & Serve: Let cool in the pan on a wire rack for at least 15-20 minutes before slicing and serving.
