Ingredients
- 4 medium sweet potatoes (about 8–10 oz each)
- 1 tbsp olive oil
- Salt and freshly ground black pepper, to taste
- 2 cups cooked, shredded chicken
- 1 cup BBQ sauce (your favorite brand)
- 1 cup shredded cheddar cheese (or Monterey Jack, or a blend)
- Fresh chopped cilantro or green onions, for garnish
- Sour cream or Greek yogurt, for serving (optional)
Instructions
- 1. Roast Sweet Potatoes: Preheat oven to 400°F (200°C). Pierce sweet potatoes, rub with olive oil, salt, and pepper. Roast for 45-60 minutes until very tender.
- 2. Prepare BBQ Chicken: In a bowl, combine shredded cooked chicken with BBQ sauce. Stir until evenly coated.
- 3. Stuff and Bake: Slice roasted sweet potatoes lengthwise, fluff flesh with a fork. Spoon BBQ chicken mixture into each potato, top with shredded cheese. Bake for 10-15 minutes until cheese is melted and bubbly.
