Ingredients
- 5 oz (about 5–6 cups) mixed spring greens
- 1 cup fresh blueberries
- 1/2 cup shelled pistachios
- 1/4 cup crumbled feta cheese
- 1/4 cup thinly sliced red onion
- 1/4 cup extra virgin olive oil
- 2 tbsp white wine vinegar
- 1 tsp Dijon mustard
- 1 tsp honey or maple syrup
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Prepare Greens: Wash and thoroughly dry mixed spring greens. Place in a large salad bowl.
- Step 2: Toast Pistachios: In a dry skillet over medium-low heat, toast shelled pistachios for 3-5 minutes until fragrant. Let cool.
- Step 3: Make Vinaigrette: Whisk together olive oil, white wine vinegar, Dijon mustard, honey, salt, and pepper in a small bowl or jar until emulsified.
- Step 4: Assemble Salad: Add blueberries, cooled pistachios, feta, and red onion to the greens. Drizzle with half of the vinaigrette and gently toss. Add more dressing to taste. Serve immediately.
