Ingredients

  • 5 oz (about 56 cups) mixed spring greens
  • 1 cup fresh blueberries
  • 1/2 cup shelled pistachios
  • 1/4 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 1/4 cup extra virgin olive oil
  • 2 tbsp white wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

  • Step 1: Prepare Greens: Wash and thoroughly dry mixed spring greens. Place in a large salad bowl.
  • Step 2: Toast Pistachios: In a dry skillet over medium-low heat, toast shelled pistachios for 3-5 minutes until fragrant. Let cool.
  • Step 3: Make Vinaigrette: Whisk together olive oil, white wine vinegar, Dijon mustard, honey, salt, and pepper in a small bowl or jar until emulsified.
