Ingredients
- 8 small flour or corn tortillas
- 6 large eggs
- 2 tbsp milk or cream (optional, for fluffier eggs)

- 4 slices bacon, cooked and crumbled, or 1/2 lb breakfast sausage, cooked and crumbled (optional)
- 1/2 small onion, diced
- 1/2 bell pepper (any color), diced

Instructions
- Step 1: Prep Ingredients. Dice onion and bell pepper. Cook and crumble bacon or sausage if using. Whisk eggs with milk/cream, salt, and pepper.
- Step 2: Sauté Veggies. Heat olive oil or butter in a large skillet over medium heat. Add diced onion and bell pepper and sauté until softened, about 5-7 minutes.
- Step 3: Cook Eggs. Pour whisked eggs into the skillet with the sautéed veggies (or a separate non-stick pan). Cook over medium-low heat, gently pushing cooked egg from edges to center, until just set but still moist. Remove from heat.
- Step 4: Warm Tortillas. Heat a dry skillet over medium-high heat. Warm tortillas one at a time for 15-20 seconds per side until pliable. Alternatively, microwave or oven-warm.
