Ingredients
- 1 loaf crusty bread (baguette, ciabatta, or rustic Italian), sliced 1/2-inch thick
- 2–3 large ripe tomatoes (Roma, heirloom, or a pint of cherry/grape tomatoes), diced
- 8 oz fresh burrata cheese, at room temperature
- 2–3 cloves garlic, peeled
- 1/4 cup good quality extra virgin olive oil, plus more for drizzling
- 1/4 cup fresh basil leaves, torn or thinly sliced
- Flaky sea salt, to taste
- Freshly ground black pepper, to taste
- Optional: Balsamic glaze, honey, or thin slices of prosciutto for garnish
Instructions
- Step 1: Prepare Tomatoes: Dice tomatoes and place in a bowl. Season generously with flaky sea salt and black pepper. Let sit for 10-15 minutes to draw out juices and enhance flavor.
- Step 2: Toast Bread: Preheat oven to 375°F (190°C). Arrange bread slices on a baking sheet. Drizzle lightly with olive oil. Bake for 8-12 minutes, or until golden brown and crisp.
- Step 3: Infuse Garlic: Once bread is out of the oven and still warm, rub a peeled garlic clove vigorously over the surface of each toasted slice.
- Step 4: Assemble Bruschetta: Spoon the seasoned tomato mixture onto each garlic-rubbed toast. Gently tear or slice pieces of burrata and place on top of the tomatoes.
- Step 5: Final Touches: Garnish with fresh basil leaves. Drizzle with a final touch of extra virgin olive oil. Season with additional flaky sea salt and black pepper if desired. Serve immediately.
