Ingredients
- 1 tbsp olive oil
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 24 oz (approx. 2 jars) marinara sauce (good quality)
- 1 tsp dried Italian seasoning
- Salt and freshly ground black pepper, to taste
- 20 oz (approx. 2 packages) potato gnocchi (fresh or shelf-stable, uncooked)
- 1.5 cups shredded low-moisture, part-skim mozzarella cheese, divided
- 0.5 cup freshly grated Parmesan cheese, divided
- Fresh basil or parsley, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add diced onion and cook until softened and translucent, 5-7 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in marinara sauce, Italian seasoning, salt, and pepper. Stir well. Gently fold in uncooked gnocchi, ensuring each piece is coated.
- If not using an oven-safe skillet, transfer gnocchi and sauce mixture to the prepared baking dish.
- Sprinkle half of the mozzarella and half of the Parmesan cheese evenly over the gnocchi.
- Cover the baking dish tightly with aluminum foil and bake for 20 minutes.
- Remove foil, sprinkle remaining mozzarella and Parmesan cheese over the top. Bake uncovered for another 15-20 minutes, or until cheese is melted, bubbly, and golden brown.
- For an extra crispy top, broil for 1-2 minutes, watching carefully.
- Let the casserole rest for 5-10 minutes before serving. Garnish with fresh basil or parsley, if desired.
