  • Yield: 24 bites

Description

Discover how to make crispy, cheesy Loaded Hashbrown Bites with smoky bacon and fresh chives. Perfect for breakfast, brunch, or a delicious snack!

Ingredients

  • 20 oz (about 560g) frozen shredded hash browns, thawed and squeezed dry
  • 1 cup (4 oz / 113g) shredded sharp cheddar cheese
  • 1 cup (4 oz / 113g) shredded Monterey Jack cheese
  • 6 slices cooked bacon, crumbled
  • 2 tbsp fresh chives, minced
  • 2 large eggs
  • 2 tbsp all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper (or to taste)
  • Cooking spray or butter for greasing

Instructions

  • 1. Prepare Hash Browns: Thaw frozen hash browns completely. Place them in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial for crispiness.
  • 2. Combine Wet Ingredients: In a large bowl, whisk together the eggs, garlic powder, onion powder, salt, and black pepper until well combined.
  • 3. Mix All Ingredients: Add the squeezed hash browns, shredded cheeses, crumbled bacon, minced chives, and flour to the egg mixture. Gently fold until all ingredients are just combined. Do not overmix.
  • 4. Form Bites: Preheat oven to 400°F (200°C). Lightly grease a mini muffin tin. Scoop the hashbrown mixture into each muffin cup, pressing down gently to compact.
  • 5. Bake: Bake for 20-25 minutes, or until the bites are golden brown and crispy around the edges.
  • 6. Cool & Serve: Let the bites cool in the muffin tin for 5-10 minutes before carefully removing them. Serve warm with your favorite dipping sauces.
