Ingredients
- 20 oz (about 560g) frozen shredded hash browns, thawed and squeezed dry
- 1 cup (4 oz / 113g) shredded sharp cheddar cheese
- 1 cup (4 oz / 113g) shredded Monterey Jack cheese
- 6 slices cooked bacon, crumbled
- 2 tbsp fresh chives, minced
- 2 large eggs
- 2 tbsp all-purpose flour
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt (or to taste)
- ¼ tsp black pepper (or to taste)
- Cooking spray or butter for greasing

- 1. Prepare Hash Browns: Thaw frozen hash browns completely. Place them in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial for crispiness.
- 2. Combine Wet Ingredients: In a large bowl, whisk together the eggs, garlic powder, onion powder, salt, and black pepper until well combined.
- 3. Mix All Ingredients: Add the squeezed hash browns, shredded cheeses, crumbled bacon, minced chives, and flour to the egg mixture. Gently fold until all ingredients are just combined. Do not overmix.
