Ingredients

  • 2 ripe avocados, diced (add just before serving)
  • For the Dressing:
  • ¼ cup extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)
  • 1 teaspoon sugar or agave nectar (optional, to balance flavors)

Instructions

  • Step 1: Prepare the Vegetables. Wash and dice all bell peppers, red onion, and tomatoes into uniform 1/4 to 1/2-inch pieces. If tomatoes are very juicy, gently squeeze out excess liquid. Mince garlic and chop cilantro.
  • Step 2: Combine Main Ingredients. In a large mixing bowl, combine the drained and rinsed black beans, black-eyed peas, and kidney beans. Add the corn, diced bell peppers, red onion, and tomatoes. Stir gently to combine.
