Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 tbsp olive oil
- 1 tbsp unsalted butter
- 1 large yellow onion, diced
- 1 green bell pepper, diced
- 1 stalk celery, diced
- 3 cloves garlic, minced
- 2–3 tbsp Cajun seasoning (divided)
- 1.5 cups chicken broth
- 1 cup heavy cream
- 2 cups cooked long-grain white rice
- Fresh green onions or parsley, chopped, for garnish
Instructions
- 1. Prep Ingredients: Dice vegetables, mince garlic, cut chicken, and measure all liquids and seasonings.
- 2. Sear Chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with half the Cajun seasoning and sear until golden brown. Remove and set aside.
- 3. Sauté Aromatics: Add butter to the pan. Sauté onion, bell pepper, and celery until softened (5-7 mins). Add garlic and cook for 1 minute.
- 4. Deglaze & Simmer: Pour in chicken broth, scraping up browned bits. Stir in remaining Cajun seasoning. Bring to a gentle simmer for 2-3 minutes.
- 5. Add Cream & Chicken: Reduce heat to low. Stir in heavy cream and return chicken to the pan. Simmer gently for 5-7 minutes until sauce thickens and chicken is cooked through. Do not boil.
- 6. Cook Rice: Prepare long-grain white rice according to package directions.
- 7. Assemble Bowls: Serve creamy Cajun chicken and sauce over fluffy rice. Garnish with fresh green onions or parsley.
