  • 1 lb ground beef (80/20 recommended)
  • 1 (8 oz) block cream cheese, softened and cubed
  • 1 (16 oz) block Velveeta cheese, cubed
  • 2 cups shredded sharp cheddar cheese
  • 1 (10 oz) can Rotel Diced Tomatoes with Green Chilies, undrained
  • 1/2 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • Salt and black pepper to taste
  • Optional: 1-2 tbsp milk (for thinning)
  • Optional garnishes: fresh cilantro, sliced jalapeños

Instructions

  • Brown Beef & Aromatics: In a large skillet, brown ground beef. Drain grease. Add diced onion and minced garlic; cook until softened. Stir in chili powder and cumin; cook for 1 minute.
  • Combine in Crockpot: Transfer beef mixture to a 6-quart Crockpot. Add cubed cream cheese, Velveeta, shredded cheddar, and undrained Rotel.
  • Melt & Stir: Cover and cook on LOW for 1.5-2 hours (or HIGH for 45-60 mins), stirring every 20-30 minutes until all cheese is melted and smooth. Add milk if needed for desired consistency.
