Ingredients
- 1 lb ground beef (80/20 recommended)
- 1 (8 oz) block cream cheese, softened and cubed
- 1 (16 oz) block Velveeta cheese, cubed
- 2 cups shredded sharp cheddar cheese
- 1 (10 oz) can Rotel Diced Tomatoes with Green Chilies, undrained
- 1/2 medium yellow onion, finely diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp ground cumin
- Salt and black pepper to taste
- Optional: 1-2 tbsp milk (for thinning)
- Optional garnishes: fresh cilantro, sliced jalapeños
Instructions
- Brown Beef & Aromatics: In a large skillet, brown ground beef. Drain grease. Add diced onion and minced garlic; cook until softened. Stir in chili powder and cumin; cook for 1 minute.
- Combine in Crockpot: Transfer beef mixture to a 6-quart Crockpot. Add cubed cream cheese, Velveeta, shredded cheddar, and undrained Rotel.
- Melt & Stir: Cover and cook on LOW for 1.5-2 hours (or HIGH for 45-60 mins), stirring every 20-30 minutes until all cheese is melted and smooth. Add milk if needed for desired consistency.
- Serve: Switch Crockpot to ‘WARM’ setting. Garnish as desired and serve hot with your favorite dippers.
