Ingredients
- 1 tbsp olive oil or neutral oil
- 1 lb boneless, skinless chicken thighs or breast, cut into 1-inch cubes
- 8 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1/4 cup soy sauce (or tamari for gluten-free)
- 1/2 cup heavy cream (or alternative)
- 2 tbsp cornstarch mixed with 2 tbsp cold water (cornstarch slurry)
- 8 oz ramen noodles (fresh or dried, without seasoning packets)
- 2 cups fresh spinach or sliced mushrooms (optional)
- 1 tsp toasted sesame oil
- Optional garnishes: sliced green onions, chili crunch, toasted sesame seeds
Instructions
- Prep Ingredients: Dice chicken, mince garlic, measure liquids, and prepare cornstarch slurry.
- Sear Chicken: Heat oil in a large pot over medium-high heat. Sear chicken until golden brown. Remove and set aside.
- Build Broth: Reduce heat to medium. Sauté minced garlic for 1-2 minutes until fragrant. Add chicken broth and soy sauce; bring to a simmer.
- Thicken Broth: Whisk in cornstarch slurry until thickened. Stir in heavy cream and return chicken to the pot. Add vegetables and cook for 1-2 minutes.
