Ingredients

  • 1/4 cup fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1/4 cup mayonnaise (homemade or good quality store-bought)
  • 1 teaspoon honey or maple syrup
  • 1 small clove garlic, minced
  • 1/2 cup extra virgin olive oil
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon freshly ground black pepper, or to taste

Instructions

  • In a medium bowl, combine the fresh lemon juice, Dijon mustard, mayonnaise, honey (or maple syrup), and minced garlic. Whisk until well combined and smooth.
  • While continuously whisking vigorously, slowly drizzle in the extra virgin olive oil in a thin, steady stream. Continue whisking until all the oil is incorporated and the vinaigrette is thick and creamy.
