Ingredients
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 1 large shallot, minced
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 3–4 cups chicken or vegetable broth, warm
- 1 lb large shrimp, peeled and deveined
- 1/2 tsp salt, plus more to taste
- 1/4 tsp black pepper, plus more to taste
- Pinch red pepper flakes (optional)
- 1/2 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1 tbsp fresh lemon juice
- 2 tbsp fresh parsley, chopped
Instructions
- 1. Prep Shrimp: Pat shrimp dry and season with salt, pepper, and red pepper flakes. Set aside.
- 2. Sauté Aromatics: Heat olive oil and butter in a large skillet over medium heat. Add shallots and cook 2-3 minutes until softened. Add garlic and cook 1 minute until fragrant.
- 3. Toast Orzo: Add orzo to the skillet and toast, stirring constantly, for 2-3 minutes until lightly golden and nutty.
- 4. Simmer Orzo: Pour in 1 cup of broth. Bring to a simmer, then reduce heat to medium-low. Gradually add remaining broth, 1/2 cup at a time, stirring until absorbed before adding more. Cook 10-12 minutes until orzo is al dente.
- 5. Add Shrimp: Nestled seasoned shrimp into the orzo. Cook 2-4 minutes, flipping once, until opaque and pink.
- 6. Finish Sauce: Remove from heat. Stir in heavy cream and Parmesan cheese until melted and creamy.
- 7. Brighten & Serve: Stir in lemon juice and fresh parsley. Taste and adjust seasoning. Serve immediately.
