- 2 large Russet potatoes (about 1.5 lbs)

- 1. Prep & Soak: Peel potatoes (optional) and cut into 1/4 to 1/2-inch thick sticks. Place in a large bowl, cover with cold water, and soak for at least 30 minutes (up to 2 hours).
- 2. Dry Thoroughly: Drain potatoes completely. Spread them on a clean kitchen towel or paper towels and pat them absolutely dry. This step is crucial for crispiness.
- 3. Season & Oil: Transfer dried fries to a bowl. Drizzle with olive oil and sprinkle with salt. Toss well to ensure an even coating on all fries.
- 4. Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for 5 minutes.
