Ingredients
- 1.5 lbs lean ground beef
- 1 large yellow onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 medium potatoes, peeled and diced (about 3 cups)
- 4 cups beef broth (low sodium recommended)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried mustard
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper (or to taste)
- 8 oz cream cheese, softened
- 1/2 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- Optional: 1 tbsp Worcestershire sauce
- Optional toppings: crispy bacon bits, chopped pickles, shredded lettuce, diced tomatoes, sour cream
Instructions
- Step 1: Brown the Beef. In a large skillet over medium-high heat, brown the ground beef until no pink remains. Drain off any excess fat and transfer the cooked beef to your slow cooker.
- Step 2: Add Vegetables and Broth. To the slow cooker, add the diced onion, carrots, celery, and potatoes. Pour in the beef broth and Worcestershire sauce (if using).
- Step 3: Season. Stir in the garlic powder, onion powder, dried mustard, salt, and black pepper. Mix everything well to combine.
- Step 4: Slow Cook. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, or until the potatoes are fork-tender.
- Step 5: Stir in Dairy. Once cooked, stir in the softened cream cheese until fully melted and smooth. Then, gradually stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup is creamy.
