Ingredients
- 2 large Russet or Yukon Gold potatoes, thinly sliced (1/4 inch)
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1 lb cooked corned beef, shredded or diced
- 8–10 soft flour tortillas (6–8 inch)
- 1.5 cups shredded sharp cheddar cheese (or Swiss)
- For the Slaw:
- 3 cups shredded green cabbage
- 1 cup shredded carrots
- 1/2 cup mayonnaise
- 2 tbsp apple cider vinegar
- 1 tsp sugar
- 1/2 tsp celery seed
- Salt and pepper to taste
Instructions
- 1. Prep & Roast Potatoes: Preheat oven to 400°F (200°C). Toss sliced potatoes with olive oil, salt, pepper, and garlic powder. Spread in a single layer on a baking sheet. Roast for 20-25 minutes, flipping halfway, until golden and crispy.
- 2. Prepare Corned Beef: If using raw, braise until tender, then shred. If using leftover, shred/dice and gently warm in a skillet with a splash of broth.
- 3. Make the Slaw: Combine cabbage and carrots in a bowl. Whisk mayonnaise, apple cider vinegar, sugar, celery seed, salt, and pepper in a separate bowl. Pour dressing over cabbage mixture and toss to combine.
- 4. Assemble Tacos: Warm tortillas. Layer each with roasted potatoes, corned beef, shredded cheese, and a spoonful of slaw.
- 5. Bake to Melt: Fold tacos in half and arrange on a baking sheet. Bake for 5-7 minutes at 350-400°F (175-200°C) until cheese is melted and tortillas are lightly toasted. Serve immediately.
