This easy BBQ chicken recipe delivers perfectly tender, juicy chicken with a sticky, caramelized glaze every time. It’s simple to make and guaranteed to be a family favorite.
Ingredients
- 2–3 lbs bone-in, skin-on chicken thighs or drumsticks
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika (smoked or sweet)
- 1 tbsp brown sugar (optional, for rub)
- 1.5 cups your favorite BBQ sauce
- 1 tbsp apple cider vinegar or lemon juice (optional, for sauce balance)
- Olive oil (for grilling, if applicable)
Instructions
- 1. Prep Chicken: Pat chicken pieces thoroughly dry with paper towels.
- 2. Season: In a small bowl, combine salt, pepper, paprika, and brown sugar (if using). Rub generously over all sides of the chicken.
- 3. Marinate (Optional): For best flavor, marinate chicken in a mixture of 1/2 cup BBQ sauce, apple cider vinegar, and a drizzle of olive oil for 30 minutes to 4 hours in the refrigerator.
- 4. Cook (Oven): Preheat oven to 400°F (200°C). Place chicken on a lined baking sheet and roast for 25-30 minutes, or until internal temperature reaches 165°F (74°C).
- 5. Cook (Grill): Preheat grill to medium heat (375-400°F / 190-200°C). Lightly oil grates. Grill chicken skin-side down for 5-7 minutes per side, turning occasionally, until internal temperature reaches 165°F (74°C).
- 6. Glaze: Brush chicken generously with BBQ sauce. If oven roasting, return to oven for 10-15 minutes, brushing with more sauce every 5 minutes, until sticky and caramelized. If grilling, continue over indirect heat, brushing with sauce every 3-5 minutes, until glazed.
- 7. Rest: Remove chicken from heat, tent loosely with foil, and let rest for 5-10 minutes before serving.
