Ingredients

  • 2 slices sturdy bread (sourdough or white bread recommended)
  • 23 slices sharp cheddar cheese
  • 23 slices Monterey Jack or Gruyere cheese
  • 46 dill pickle slices, patted very dry
  • 12 tablespoons unsalted butter, softened, or mayonnaise

Instructions

  • Prepare Ingredients: Pat dill pickle slices thoroughly dry with paper towels. If using butter, ensure it’s softened.
  • Assemble Sandwich: Spread a thin, even layer of softened butter or mayonnaise on one side of each bread slice. Place one slice of bread, buttered side down, in a cold skillet. Layer half of the cheddar cheese, then the Monterey Jack, followed by the dried dill pickle slices. Top with the remaining cheddar cheese. Place the second slice of bread on top, buttered side up.
  • Grill to Perfection: Place the skillet over medium-low heat. Cook for 3-5 minutes per side, or until the bread is golden brown and crispy, and the cheese is completely melted and gooey. Gently press down with a spatula occasionally.
