Ingredients
- 1/2 cup (113g) unsalted butter, softened
- 1 1/2 cups (300g) granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon pure vanilla extract
- 2 cups (240g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (120ml) buttermilk or whole milk, room temperature
- 3–4 medium fresh peaches, peeled, pitted, and sliced (about 2 cups)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or 9×13 inch baking dish.
- In a large bowl, cream softened butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, alternating with buttermilk, beginning and ending with dry. Mix just until combined.
- Gently fold in the sliced fresh peaches.
- Pour batter into prepared pan and smooth the top.
- Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
- Cool in the pan on a wire rack for 15-20 minutes, then invert onto the rack to cool completely.
