Ingredients
- 1 large baguette or ciabatta loaf, sliced 1/2-inch thick
- 3–4 ripe Roma tomatoes (or 1 pint cherry tomatoes), diced
- 4 oz (113g) block of Greek feta cheese, crumbled
- 1/4 cup fresh parsley, finely chopped
- 2 tablespoons fresh oregano, finely chopped
- 1/4 cup extra virgin olive oil, plus more for brushing
- 1–2 cloves garlic, peeled and halved (optional, for rubbing bread)
- Salt and freshly ground black pepper to taste
- Optional garnishes: Kalamata olives, red onion, balsamic glaze
Instructions
- Preheat oven to 375°F (190°C).
- Dice tomatoes and combine in a bowl with crumbled feta, chopped parsley, and oregano. Drizzle with 1/4 cup olive oil, season with salt and pepper, and gently toss. Let sit for 15-20 minutes.
- Brush both sides of bread slices with olive oil. Arrange on a baking sheet and toast in the oven for 8-12 minutes, flipping halfway, until golden and crisp.
- If desired, rub one side of each warm toasted bread slice with a cut garlic clove.
- Spoon a generous amount of the tomato-feta mixture onto each toasted bread slice.
- Garnish with extra fresh herbs or optional add-ins. Serve immediately.
