Ingredients
- 2 ripe but firm peaches, halved and pitted
- 1 tbsp olive oil (for peaches)
- 1 cup fresh blueberries
- 5 oz sturdy mixed greens (spinach, arugula, or spring mix)
- 1/4 cup crumbled feta or goat cheese
- 1/4 cup toasted pecans or walnuts
- 1/4 small red onion, thinly sliced
- For the Vinaigrette:
- 3 tbsp extra virgin olive oil
- 1 tbsp balsamic or apple cider vinegar
- 1 tsp honey or maple syrup
- Pinch of salt
- Freshly ground black pepper
Instructions
- 1. Prep Peaches: Wash peaches, halve, pit, and slice each half into 3-4 wedges. Lightly brush with 1 tbsp olive oil.
- 2. Grill Peaches: Preheat grill or grill pan to medium-high. Grill peach wedges for 2-4 minutes per side until charred and tender. Set aside to cool slightly.
- 3. Make Vinaigrette: In a small bowl, whisk together 3 tbsp extra virgin olive oil, 1 tbsp vinegar, 1 tsp honey/maple syrup, salt, and pepper until emulsified.
- 4. Assemble Salad: In a large bowl, combine greens, blueberries, and red onion. Add cooled grilled peaches, crumbled cheese, and toasted nuts.
- 5. Dress and Serve: Just before serving, drizzle vinaigrette over the salad and toss gently to combine. Serve immediately.
