Ingredients

  • 2 ripe but firm peaches, halved and pitted
  • 1 tbsp olive oil (for peaches)
  • 1 cup fresh blueberries
  • 5 oz sturdy mixed greens (spinach, arugula, or spring mix)
  • 1/4 cup crumbled feta or goat cheese
  • 1/4 cup toasted pecans or walnuts
  • 1/4 small red onion, thinly sliced
  • For the Vinaigrette:
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic or apple cider vinegar
  • 1 tsp honey or maple syrup
  • Pinch of salt
  • Freshly ground black pepper

Instructions

  • 1. Prep Peaches: Wash peaches, halve, pit, and slice each half into 3-4 wedges. Lightly brush with 1 tbsp olive oil.
  • 2. Grill Peaches: Preheat grill or grill pan to medium-high. Grill peach wedges for 2-4 minutes per side until charred and tender. Set aside to cool slightly.
  • 3. Make Vinaigrette: In a small bowl, whisk together 3 tbsp extra virgin olive oil, 1 tbsp vinegar, 1 tsp honey/maple syrup, salt, and pepper until emulsified.
  • 4. Assemble Salad: In a large bowl, combine greens, blueberries, and red onion. Add cooled grilled peaches, crumbled cheese, and toasted nuts.
