Ingredients

  • 1.5 lbs boneless, skinless chicken thighs (or breasts), cut into bite-sized pieces
  • 1 tbsp olive oil, divided
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 3 cups corn kernels (fresh, frozen, or canned, drained)
  • 1/2 cup plain Greek yogurt (or 1/4 cup Greek yogurt + 1/4 cup mayonnaise)
  • 2 tbsp fresh lime juice, plus extra for serving
  • 1/4 cup chopped fresh cilantro, plus extra for garnish
  • 1/4 cup crumbled Cotija cheese (or feta/Parmesan), for garnish
  • 2 tbsp finely diced red onion, for garnish
  • Optional: hot sauce, for serving

Instructions

  • 1. Prepare and Sear Chicken: Pat chicken dry. In a bowl, toss chicken with 1/2 tbsp olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Heat a large skillet over medium-high heat. Add chicken and sear for 4-6 minutes per side until cooked through. Remove and let rest, then slice or dice.
  • 2. Char the Corn: In the same skillet, add remaining 1/2 tbsp olive oil. Add corn kernels and cook over medium-high heat, stirring occasionally, for 5-8 minutes until tender and charred. Remove from heat.
  • 3. Make Street Corn Sauce: In a medium bowl, combine Greek yogurt, lime juice, a pinch of chili powder, hot sauce (if using), and 1/4 cup cilantro. Stir until smooth. Taste and adjust seasoning.
  • 4. Assemble Bowls: Divide chicken and charred corn among serving bowls. Drizzle generously with street corn sauce. Garnish with Cotija cheese, red onion, and extra cilantro. Serve with an extra squeeze of lime.
