Ingredients

  • 12 large hard-boiled eggs, peeled
  • 4 oz cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/4 cup shredded sharp cheddar cheese
  • 23 fresh jalapeños, deseeded, finely diced
  • 4 slices bacon, cooked crispy and crumbled
  • 1 tsp Dijon mustard (or yellow mustard)
  • 1 tsp apple cider vinegar (or white vinegar)
  • 1/2 tsp garlic powder
  • Salt and freshly ground black pepper, to taste
  • Fresh chives or green onions, chopped, for garnish

Instructions

  • Boil and Prepare Eggs: Place eggs in a saucepan, cover with cold water. Bring to a boil, then remove from heat, cover, and let stand 10-12 minutes. Transfer to an ice bath. Peel, slice in half lengthwise, and scoop yolks into a bowl. Place whites on a platter.
  • Cook Bacon and Sauté Jalapeños: Cook bacon until crispy. Crumble, reserving some for garnish. Sauté diced jalapeños in 1 tbsp bacon fat until softened.
  • Create Yolk Filling: Add cream cheese, mayonnaise, cheddar, sautéed jalapeños, mustard, vinegar, garlic powder, salt, and pepper to yolks. Mash until smooth. Stir in most crumbled bacon.
  • Assemble and Garnish: Spoon or pipe yolk mixture into egg white halves. Garnish with reserved bacon and fresh chives/green onions.
