Ingredients
- 1 tbsp olive oil
- 1 lb large shrimp, peeled and deveined
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 1 cup orzo pasta
- 3 cups chicken or vegetable broth
- 1 lemon, zested and juiced
- 4 oz feta cheese, crumbled (about 1 cup)
- 1/4 cup fresh parsley, chopped
- Salt and freshly ground black pepper to taste
Instructions
- Cook Orzo: Bring a large pot of salted water to a boil. Add orzo and cook according to package directions until al dente. Drain, reserving 1/2 cup pasta water.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using); sauté 30-60 seconds until fragrant.
- Sear Shrimp: Add shrimp to the skillet, season with salt and pepper. Cook 1-2 minutes per side until pink and opaque. Remove shrimp and set aside.
- Deglaze: Pour broth into the skillet, scraping up any browned bits. Bring to a simmer and reduce slightly for 2-3 minutes.
- Combine & Finish: Add cooked orzo, lemon zest, and lemon juice to the broth. Stir in half the feta until creamy. If needed, add reserved pasta water. Gently fold in cooked shrimp and most of the parsley.
- Serve: Taste and adjust seasoning. Garnish with remaining feta and parsley. Serve immediately.
