Ingredients
- 1 tbsp olive oil
- 1 small yellow onion, chopped
- 3 cloves garlic, minced
- 1 cup orzo pasta
- 3 cups low-sodium chicken or vegetable broth
- 1 lb raw shrimp, peeled and deveined (medium to large)
- 1 lemon, zested and juiced
- 1/4 cup fresh parsley or dill, chopped
- Salt and freshly ground black pepper to taste
- Optional: Red pepper flakes for heat
Instructions
- Step 1: Sauté Aromatics: Heat olive oil in a large, deep skillet over medium heat. Add chopped onion and cook until softened (3-5 minutes). Stir in minced garlic and cook for 1 minute until fragrant.
- Step 2: Toast Orzo: Add dry orzo to the skillet. Stir constantly for 2-3 minutes until lightly golden and nutty.
- Step 3: Simmer Orzo: Pour in broth, bring to a simmer. Reduce heat to low, cover, and cook for 8-10 minutes, stirring occasionally, until most liquid is absorbed and orzo is almost al dente.
- Step 4: Add Shrimp: Nestle shrimp into the orzo. Cover and cook for 3-5 minutes, or until shrimp are pink and opaque.
- Step 5: Finish & Serve: Remove from heat. Stir in lemon juice, lemon zest, and fresh herbs. Season with salt and pepper to taste. Serve immediately.
