- 1 lb (450g) ground chicken (92-93% lean)
- 5 oz (140g) fresh spinach, finely chopped
- 2 cloves garlic, minced
- 1/4 cup finely diced onion (about 1/4 small onion)
- 1 large egg
- 1/4 cup almond flour
- 1/4 cup grated Parmesan cheese (optional, but recommended)
- 1 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- Olive oil or avocado oil for cooking (if pan-frying/air frying)
Instructions
- Prep Spinach: Finely chop fresh spinach. Place in a clean kitchen towel and squeeze out as much excess water as possible.
- Combine Ingredients: In a large bowl, combine ground chicken, squeezed spinach, minced garlic, diced onion, egg, almond flour, Parmesan cheese (if using), Italian seasoning, red pepper flakes, salt, and black pepper. Gently mix with your hands until just combined, being careful not to overmix.
- Form Meatballs: Using a small cookie scoop or your hands, form the mixture into uniform 1.5 to 2-inch meatballs. Place them on a parchment-lined baking sheet.
- Cook Meatballs (Choose your method):
- Bake: Preheat oven to 400°F (200°C). Bake for 18-22 minutes, or until cooked through and lightly golden.
- Pan-Fry: Heat 1 tbsp oil in a large skillet over medium heat. Cook meatballs in batches for 3-5 minutes per side until browned and cooked through.
- Air Fry: Preheat air fryer to 375°F (190°C). Air fry for 12-15 minutes, shaking basket halfway, until golden and cooked through.
