Ingredients
- 4 ripe nectarines, pitted and chopped (about 2 cups)
- 2 cups full-fat Greek yogurt
- 2–4 tablespoons honey or maple syrup (adjust to taste)
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon vanilla extract (optional)
- Pinch of salt (optional)
Instructions
- 1. Prepare Nectarines: Wash, pit, and chop nectarines. If desired, roast for 10-15 minutes at 375°F (190°C) and cool completely to intensify flavor.
- 2. Blend Base: In a high-speed blender, combine chopped nectarines, Greek yogurt, sweetener, lemon juice, and optional vanilla and salt. Blend until completely smooth and creamy. Taste and adjust sweetness or tartness.
- 3. Churn (Ice Cream Maker): Pour mixture into a pre-chilled ice cream maker bowl. Churn according to manufacturer’s instructions (20-30 minutes) until soft-serve consistency. Transfer to an airtight container and freeze for 2-4 hours for a firmer scoop.
- 4. Freeze (No Ice Cream Maker): Pour mixture into a shallow, freezer-safe container. Freeze for 1-2 hours, then stir vigorously with a fork. Repeat stirring every 30-60 minutes for 3-4 hours, or until desired consistency. For extra smoothness, re-blend partially frozen mixture in a food processor before final freeze.
