Instructions
- Step 1: Prepare the Crust. In a medium bowl, combine graham cracker crumbs and melted butter. Press firmly into the bottom of a 9×13 inch baking dish. Refrigerate while preparing other components.
- Step 2: Macerate Strawberries. In a separate bowl, combine sliced strawberries, granulated sugar, and lemon juice (if using). Toss gently and let sit for 15-20 minutes to release juices.
- Step 3: Make Cream Cheese Mixture. In a large bowl, beat softened cream cheese, 1/2 cup powdered sugar, and 1 tsp vanilla extract until smooth and creamy.
- Step 4: Whip Heavy Cream. In a very cold bowl, whip cold heavy cream, 1/4 cup powdered sugar, and 1/2 tsp vanilla extract until firm peaks form.
- Step 5: Combine Cream Mixtures. Gently fold about one-third of the whipped cream into the cream cheese mixture to lighten it, then fold in the remaining whipped cream until just combined.
- Step 6: Layer the Dessert. Spread half of the cream mixture over the graham cracker crust. Top with half of the macerated strawberries. Repeat with the remaining cream mixture and then the rest of the strawberries.
- Step 7: Chill. Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, before serving.
