Ingredients

  • 23 ripe, fresh peaches, sliced
  • 8 oz (225g) fresh burrata cheese, at room temperature
  • 5 oz (140g) fresh arugula or mixed greens
  • 23 slices prosciutto or pancetta (optional), torn or crisped
  • 1/4 cup fresh basil leaves, torn, or fresh mint leaves
  • 23 tbsp high-quality balsamic glaze
  • 12 tbsp extra virgin olive oil
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  • 1. Prepare Peaches: Wash and slice peaches into 1/4 to 1/2-inch wedges or half-moons. Arrange them artfully on a large serving platter or individual plates.
  • 2. Arrange Greens: Scatter the fresh arugula or mixed greens evenly over the platter, creating a bed for the other ingredients.
  • 3. Place Burrata: Carefully place the burrata balls (whole or gently torn) on top of the greens, nestled among the peach slices. Ensure burrata is at room temperature.
  • 4. Add Prosciutto (Optional): If using, tear prosciutto into rustic pieces and drape over the salad. If using pancetta, crisp it in a pan and sprinkle over.
  • 5. Garnish with Herbs: Tear fresh basil or mint leaves and scatter generously over the entire salad.
