Ingredients

  • For the Donut Base:
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup packed light brown sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup milk
  • ¼ cup sour cream
  • ¼ cup unsalted butter, melted and cooled
  • 1 large egg
  • 1 tsp vanilla extract
  • For the Cheesecake Filling:
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • ½ tsp vanilla extract
  • For the Peach Topping:
  • 1 ½ cups fresh or frozen (thawed) sliced peaches
  • ¼ cup packed light brown sugar
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 1 tbsp water (slurry)
  • For the Streusel:
  • ½ cup all-purpose flour
  • ¼ cup packed light brown sugar
  • ¼ tsp ground cinnamon
  • ¼ cup cold unsalted butter, cut into small pieces

Instructions

  • 1. Prepare Streusel & Donut Batter: In a small bowl, combine streusel flour, brown sugar, cinnamon, and cold butter. Cut butter in until crumbly; set aside. In a medium bowl, whisk milk, sour cream, melted butter, egg, and vanilla. In a large bowl, sift flour, granulated sugar, brown sugar, baking powder, baking soda, and salt. Add wet ingredients to dry; mix until just combined (do not overmix).
  • 2. Bake Donuts: Preheat oven to 350°F (175°C). Grease and flour a 12-cavity donut pan. Pipe donut batter into cavities, filling ⅔ full. Bake 10-12 minutes, until golden and springy. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  • 3. Make Cheesecake Filling & Peach Topping: For filling, beat softened cream cheese, powdered sugar, and vanilla until smooth. Transfer to a piping bag. For topping, combine peaches, brown sugar, cinnamon, nutmeg, and lemon juice in a saucepan. Cook over medium heat until peaches soften. Stir in cornstarch slurry; cook 1-2 minutes until thickened. Let cool slightly.
  • 4. Assemble Donuts: Once donuts are cool, pipe cheesecake filling into the center of each donut. Spoon peach topping over the cheesecake. Sprinkle generously with prepared streusel. Serve immediately.
