Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup unsalted butter, melted
  • 2 tbsp granulated sugar
  • 2 cups full-fat Greek yogurt
  • 1 cup creamy natural peanut butter
  • ¼ cup maple syrup or honey (adjust to taste)
  • 1 tsp vanilla extract
  • Optional: ½ cup mini chocolate chips or chopped peanuts

Instructions

  • Prepare the Crust: Line an 8×8 inch pan with parchment paper, leaving an overhang. Combine graham cracker crumbs, melted butter, and sugar. Press firmly into the pan. Freeze for 15 minutes.
  • Mix Yogurt Layer: In a large bowl, whisk together Greek yogurt, peanut butter, maple syrup/honey, and vanilla extract until smooth. Fold in optional mix-ins if using.
  • Assemble Bars: Spread the yogurt mixture evenly over the chilled crust.
  • Freeze: Freeze for at least 4-6 hours, or preferably overnight, until firm.
  • Slice and Serve: Lift bars from the pan using parchment paper. Run a sharp knife under hot water, wipe dry, and slice into squares or rectangles. Serve immediately.
