  • 23 tablespoons honey, to taste
  • 1/2 teaspoon pure vanilla extract
  • Pinch of sea salt (optional)

Instructions

  • 1. Drain the Ricotta: Place the whole milk ricotta cheese in a fine-mesh sieve lined with cheesecloth or a coffee filter set over a bowl. Let it drain in the refrigerator for at least 30 minutes, or up to 2 hours, to remove excess moisture.
  • 2. Combine Ingredients: In a medium mixing bowl, add the well-drained ricotta cheese, fresh lemon juice, lemon zest, honey (start with 2 tablespoons), and vanilla extract. Add a pinch of sea salt if desired.
  • 3. Mix Until Smooth: Using a whisk or rubber spatula, gently stir and fold the ingredients together until they are well combined and smooth. Be careful not to overmix.
  • 4. Taste and Adjust: Taste the dip and adjust the sweetness or tanginess to your preference. Add more honey for sweetness or a little more lemon juice for extra zest.
