Indulge in this delightful toast featuring sweet, jammy roasted strawberries atop a cloud of creamy whipped ricotta, all on a crispy slice of bread. It’s a perfect balance of textures and flavors for any meal.


Ingredients

  • 1 lb fresh strawberries, hulled and halved/quartered
  • 23 tbsp honey or maple syrup, divided
  • Pinch of salt
  • 1 tsp balsamic vinegar (optional)
  • 1 cup whole milk ricotta cheese
  • 1/2 tsp vanilla extract (optional)
  • 4 slices good quality rustic bread (sourdough, country loaf)
  • Extra virgin olive oil, for drizzling
  • Balsamic glaze, for drizzling (optional)
  • Fresh basil or mint leaves, for garnish

Instructions

  • Preheat oven to 375°F (190°C). Toss strawberries with 1-2 tbsp honey/maple syrup, salt, and optional balsamic vinegar. Spread on a parchment-lined baking sheet. Roast for 15-20 minutes until jammy.
  • While strawberries roast, combine ricotta, 1-2 tsp honey/maple syrup, and optional vanilla extract in a food processor or with an electric mixer. Process/beat until smooth and airy.
  • Toast bread slices until golden brown and crisp.
  • Spread whipped ricotta generously on each toasted bread slice. Top with roasted strawberries and their juices.
  • Drizzle with olive oil and/or balsamic glaze, and garnish with fresh basil or mint leaves. Serve immediately.
