Ingredients
- 1 lb fresh strawberries, hulled and halved/quartered
- 2–3 tbsp honey or maple syrup, divided
- Pinch of salt
- 1 tsp balsamic vinegar (optional)
- 1 cup whole milk ricotta cheese
- 1/2 tsp vanilla extract (optional)
- 4 slices good quality rustic bread (sourdough, country loaf)
- Extra virgin olive oil, for drizzling
- Balsamic glaze, for drizzling (optional)
- Fresh basil or mint leaves, for garnish
Instructions
- Preheat oven to 375°F (190°C). Toss strawberries with 1-2 tbsp honey/maple syrup, salt, and optional balsamic vinegar. Spread on a parchment-lined baking sheet. Roast for 15-20 minutes until jammy.
- While strawberries roast, combine ricotta, 1-2 tsp honey/maple syrup, and optional vanilla extract in a food processor or with an electric mixer. Process/beat until smooth and airy.
- Toast bread slices until golden brown and crisp.
- Spread whipped ricotta generously on each toasted bread slice. Top with roasted strawberries and their juices.
- Drizzle with olive oil and/or balsamic glaze, and garnish with fresh basil or mint leaves. Serve immediately.
