Ingredients
- 1 (9-inch) pre-made pie crust or tart shell, or homemade shortcrust pastry
- 16 oz (2 blocks) full-fat cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 1 tsp fresh lemon zest
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
- Optional: 1 tbsp all-purpose flour or cornstarch (if using frozen berries)
- Optional: Powdered sugar for dusting

- Preheat Oven & Blind Bake Crust: Preheat oven to 375°F (190°C). Place crust in a 9-inch tart pan. Prick bottom with a fork. Line with parchment paper, fill with pie weights, and blind bake for 15-20 minutes. Remove weights and parchment, bake for another 5-7 minutes until lightly golden. Let cool slightly.
- Prepare Cream Cheese Filling: In a large bowl, beat softened cream cheese and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each. Stir in vanilla extract and lemon zest until just combined and smooth.
- Assemble Tart: Pour cream cheese filling into the cooled, blind-baked tart shell. Arrange fresh berries evenly on top of the filling. If using frozen berries, toss them lightly with 1 tablespoon of flour or cornstarch before placing them.
- Bake Tart: Reduce oven temperature to 350°F (175°C). Bake for 35-45 minutes, or until the edges are set and lightly golden, and the center has a slight jiggle.
- Cool & Chill: Let the tart cool completely at room temperature, then refrigerate for at least 2-3 hours (or overnight) before slicing and serving.
- Serve: Dust with powdered sugar if desired, and serve chilled.
