Ingredients
- 6–7 ripe medium bananas, sliced 1/2-inch thick
- 1/2 cup (100g) light brown sugar, packed
- 1 tbsp all-purpose flour (for filling)
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt (for filling)
- 1/2 cup (120ml) whole milk (for filling)
- 1 tsp vanilla extract
- For the Topping:
- 1 1/2 cups (180g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1 tbsp baking powder
- 1/4 tsp salt (for topping)
- 1/2 cup (113g) unsalted butter, cold and cubed
- 1/2 cup (120ml) whole milk (for topping)
Instructions
- 1. Prepare Bananas & Filling: Preheat oven to 375°F (190°C). Arrange sliced bananas in a 9×13 inch baking dish. In a bowl, whisk together brown sugar, 1 tbsp flour, cinnamon, nutmeg, and 1/4 tsp salt. Pour over bananas and toss gently to coat. Add 1/2 cup milk and vanilla extract; stir gently.
- 2. Make the Topping: In a separate bowl, whisk together 1 1/2 cups flour, granulated sugar, baking powder, and 1/4 tsp salt. Cut in cold, cubed butter with a pastry blender or fingertips until mixture resembles coarse crumbs. Gradually add 1/2 cup milk, stirring just until a soft dough forms (do not overmix).
- 3. Assemble Cobbler: Drop spoonfuls of the topping mixture evenly over the banana filling in the baking dish.
- 4. Bake: Bake for 35-45 minutes, or until the topping is golden brown and the banana filling is bubbly around the edges.
- 5. Rest & Serve: Let the cobbler rest for 15-20 minutes before serving warm with vanilla ice cream or whipped cream.
