Ingredients
- For the Spring Mix Salad:
- 5 oz (approx. 5–6 cups) Spring Mix Greens
- 1 cup Cherry or Grape Tomatoes, halved
- 1/2 English Cucumber, thinly sliced
- 1/4 Red Onion, thinly sliced
- 1/4 cup Toasted Pecans or Walnuts
- 1/4 cup Crumbled Feta or Goat Cheese
- For the Homemade Balsamic Honey Dressing:
- 1/4 cup Balsamic Vinegar (good quality)
- 1/4 cup Extra Virgin Olive Oil
- 1 tbsp Honey (or maple syrup)
- 1 tsp Dijon Mustard
- 1 clove Garlic, minced
- 1/4 tsp Salt (or to taste)
- 1/8 tsp Black Pepper (or to taste)
Instructions
- Step 1: Prep Your Veggies. Wash and dry all produce thoroughly. Halve tomatoes, slice cucumber, and thinly slice red onion.
- Step 2: Toast the Nuts. Lightly toast pecans/walnuts in a dry skillet over medium heat until fragrant (3-5 minutes). Watch carefully to prevent burning.
- Step 3: Whisk the Dressing. In a small bowl, combine balsamic vinegar, olive oil, honey, Dijon mustard, minced garlic, salt, and pepper. Whisk vigorously until well emulsified and creamy.
