Ingredients
- 4 cups fresh or frozen corn kernels (from about 4–5 ears of corn)
- 1 tablespoon olive oil
- 1/4 cup mayonnaise (or plain Greek yogurt for a lighter option)
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1/4 cup finely diced red onion
- 1 small jalapeño, finely diced (seeds removed for less heat)
- 1/4 cup chopped fresh cilantro, plus more for garnish
- 1/2 cup crumbled Cotija cheese, plus more for garnish
- Salt and freshly ground black pepper to taste
Instructions
- 1. Char the Corn: If using fresh corn, cut kernels off cobs. Heat olive oil in a large skillet over medium-high heat. Add corn and cook, stirring occasionally, until lightly charred and tender-crisp (5-7 minutes). Let cool slightly.
- 2. Prepare Dressing: In a large bowl, whisk together mayonnaise (or Greek yogurt), lime juice, and lime zest. Season with salt and pepper.
- 3. Combine Ingredients: Add the charred corn, red onion, diced jalapeño, most of the cilantro, and most of the Cotija cheese to the dressing.
- 4. Toss Gently: Gently toss all ingredients until well combined and coated with the dressing.
- 5. Chill and Serve: Cover and refrigerate for at least 30 minutes to allow flavors to meld. Before serving, give it another gentle toss and garnish with remaining Cotija cheese and fresh cilantro.
