  • 1/4 cup finely diced red onion
  • 1 small jalapeño, finely diced (seeds removed for less heat)
  • 1/4 cup chopped fresh cilantro, plus more for garnish
  • 1/2 cup crumbled Cotija cheese, plus more for garnish
  • Salt and freshly ground black pepper to taste

Instructions

  • 1. Char the Corn: If using fresh corn, cut kernels off cobs. Heat olive oil in a large skillet over medium-high heat. Add corn and cook, stirring occasionally, until lightly charred and tender-crisp (5-7 minutes). Let cool slightly.
  • 2. Prepare Dressing: In a large bowl, whisk together mayonnaise (or Greek yogurt), lime juice, and lime zest. Season with salt and pepper.
  • 3. Combine Ingredients: Add the charred corn, red onion, diced jalapeño, most of the cilantro, and most of the Cotija cheese to the dressing.
