Ingredients
- 1 baguette or ciabatta loaf, sliced ½-inch thick
- 2 cups cherry or grape tomatoes, diced
- 8 oz burrata cheese, at room temperature
- ¼ cup fresh basil leaves, chopped or torn
- 3 tbsp extra virgin olive oil, plus more for drizzling
- 2 cloves garlic, peeled (1 for rubbing, 1 minced for tomatoes if desired)
- 1 tbsp balsamic glaze (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Dice tomatoes and place in a bowl. Season with salt, pepper, and minced garlic (if using). Let sit for 10-15 minutes.
- Arrange bread slices on a baking sheet, drizzle with olive oil, and toast for 5-8 minutes until golden and crisp.
- Immediately rub one side of each warm toast with a cut garlic clove.
