This vibrant Tortellini Caprese Salad combines tender cheese tortellini with fresh tomatoes, mozzarella, and basil. Drizzled with balsamic glaze, it’s a perfect blend of comforting and refreshing flavors.
Ingredients
- 1 (19-ounce) package fresh or frozen cheese tortellini
- 2 cups cherry or grape tomatoes, halved
- 8 ounces fresh mozzarella balls (bocconcini or ciliegine), drained
- 1/2 cup fresh basil leaves, chiffonade or whole small leaves
- 3 tablespoons extra virgin olive oil
- 2–3 tablespoons balsamic glaze
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Cook Tortellini: Bring a large pot of salted water to a boil. Add tortellini and cook according to package directions until al dente. Drain and rinse briefly with cold water; set aside to cool.
- Prepare Ingredients: Halve tomatoes. If using larger mozzarella, tear or cut into bite-sized pieces. Wash and dry basil.
- Assemble: In a large bowl, combine cooled tortellini, halved tomatoes, and mozzarella.
- Dress: Drizzle with olive oil, add basil, salt, and pepper. Gently toss to combine.
- Serve: Transfer to a serving dish. Drizzle generously with balsamic glaze just before serving.
