Ingredients

  • 1 (19-ounce) package fresh or frozen cheese tortellini
  • 2 cups cherry or grape tomatoes, halved
  • 8 ounces fresh mozzarella balls (bocconcini or ciliegine), drained
  • 1/2 cup fresh basil leaves, chiffonade or whole small leaves
  • 3 tablespoons extra virgin olive oil
  • 23 tablespoons balsamic glaze
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  • Cook Tortellini: Bring a large pot of salted water to a boil. Add tortellini and cook according to package directions until al dente. Drain and rinse briefly with cold water; set aside to cool.
  • Prepare Ingredients: Halve tomatoes. If using larger mozzarella, tear or cut into bite-sized pieces. Wash and dry basil.
  • Assemble: In a large bowl, combine cooled tortellini, halved tomatoes, and mozzarella.
  • Dress: Drizzle with olive oil, add basil, salt, and pepper. Gently toss to combine.
  • Serve: Transfer to a serving dish. Drizzle generously with balsamic glaze just before serving.
