Ingredients

  • 8 oz (226g) full-fat cream cheese, softened
  • 1/2 cup (100g) granulated sugar
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 lb (450g) fresh strawberries, hulled and sliced
  • 6 oz (170g) fresh blueberries
  • 6 oz (170g) fresh raspberries
  • 1/2 cup (50g) graham cracker crumbs (optional, for topping)
  • Fresh mint leaves, for garnish (optional)

Instructions

  • Prep the Berries: Gently wash and dry all berries. Hull and slice strawberries. Leave blueberries and raspberries whole.
  • Whip the Cheesecake Cream: In a large bowl, beat softened cream cheese, sugar, lemon zest, vanilla extract, and salt with an electric mixer until smooth and fluffy.
  • Combine and Fold: Gently fold the prepared berries into the cream cheese mixture using a rubber spatula until just combined.
