This no-bake Triple Berry Cheesecake Fruit Salad is a refreshing and creamy dessert, perfect for summer gatherings. It combines fresh berries with a luscious, tangy cheesecake filling for an irresistible treat.
Ingredients
- 8 oz (226g) full-fat cream cheese, softened
- 1/2 cup (100g) granulated sugar
- 1 tsp lemon zest
- 1 tsp vanilla extract
- Pinch of salt
- 1 lb (450g) fresh strawberries, hulled and sliced
- 6 oz (170g) fresh blueberries
- 6 oz (170g) fresh raspberries
- 1/2 cup (50g) graham cracker crumbs (optional, for topping)
- Fresh mint leaves, for garnish (optional)
Instructions
- Prep the Berries: Gently wash and dry all berries. Hull and slice strawberries. Leave blueberries and raspberries whole.
- Whip the Cheesecake Cream: In a large bowl, beat softened cream cheese, sugar, lemon zest, vanilla extract, and salt with an electric mixer until smooth and fluffy.
- Combine and Fold: Gently fold the prepared berries into the cream cheese mixture using a rubber spatula until just combined.
- Chill: Transfer to a serving bowl, cover, and refrigerate for at least 2-4 hours to allow flavors to meld and the mixture to firm up.
- Serve: Just before serving, sprinkle with graham cracker crumbs (if using) and garnish with fresh mint leaves.
