- 1 (13.8 oz) tube refrigerated pizza dough or homemade sweet pizza dough
- 15 oz whole milk ricotta cheese, well-drained
- 4 oz cream cheese, softened
- 1/2 cup granulated sugar, plus more for sprinkling
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest (from 2–3 lemons), plus more for garnish
- 1 teaspoon pure vanilla extract
- 1–2 tablespoons honey, for drizzling
- Fresh mint or basil leaves, for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Roll out pizza dough onto a parchment-lined baking sheet. Prick dough with a fork. Par-bake for 8-10 minutes until lightly golden.
- While crust bakes, combine drained ricotta, softened cream cheese, 1/2 cup granulated sugar, lemon juice, 1 tablespoon lemon zest, and vanilla extract in a bowl. Beat until smooth and creamy.
- Spread the lemon cream topping evenly over the par-baked crust, leaving a small border.
