Ingredients
- 1 baguette or ciabatta loaf, sliced into ½-inch rounds
- 2–3 ripe Roma tomatoes (or 1 pint cherry/grape tomatoes), diced
- 8 oz fresh mozzarella (ciliegine or pearls, or a larger ball diced)
- ¼ cup fresh basil leaves, chopped, plus extra for garnish
- 2–3 cloves garlic, peeled and halved
- 3–4 tablespoons extra virgin olive oil, divided
- 2–3 tablespoons balsamic glaze
- Salt and freshly ground black pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Arrange bread slices on a baking sheet, drizzle with 1-2 tablespoons olive oil, and toast for 5-7 minutes until golden and crisp.
- Immediately rub one side of each warm toasted bread slice with a cut garlic clove.
- In a medium bowl, combine diced tomatoes, chopped basil, 1 tablespoon olive oil, salt, and pepper. Toss gently and let sit for 5-10 minutes.
- If using a large mozzarella ball, dice it into small pieces. If using ciliegine or pearls, drain well.
- Spoon the tomato-basil mixture onto each garlic-rubbed toast. Top with fresh mozzarella pieces.
- Arrange on a serving platter. Just before serving, drizzle with balsamic glaze and garnish with fresh basil leaves. Serve immediately.
