A wonderfully refreshing and creamy soup, perfect for hot summer days. This vibrant dish is packed with zesty lime and rich avocado, offering a delightful balance of flavors.


Ingredients

  • 3 ripe Hass avocados, pitted and scooped
  • 1/2 cup fresh lime juice (from 34 limes)
  • 2 cups cool vegetable broth (or chicken broth)
  • 1/4 cup finely chopped green onion (white and light green parts) or 1 small shallot, minced
  • 1 clove garlic, minced (optional, for sautéing)
  • 1/4 cup fresh cilantro or mint, chopped, plus more for garnish
  • 1/2 small jalapeño, deseeded and minced (optional, for heat)
  • 1/2 teaspoon sea salt, or to taste
  • 1/4 teaspoon black pepper, or to taste

Instructions

  • 1. Prepare Ingredients: Halve and pit avocados, scoop out flesh. Juice limes. Mince green onion, garlic (if using), jalapeño (if using), and chop herbs.
  • 2. Sauté Aromatics (Optional): If desired, sauté minced green onion, garlic, and jalapeño in a tiny bit of olive oil for 2-3 minutes until softened. Let cool slightly.
  • 3. Blend: In a high-speed blender, combine avocado flesh, lime juice, cool broth, sautéed (or raw) aromatics, and most of the fresh herbs. Blend until completely smooth and creamy, scraping down sides as needed.
  • 4. Chill: Pour soup into an airtight container. Cover tightly, pressing plastic wrap directly onto the surface of the soup. Refrigerate for at least 2-4 hours to chill thoroughly and allow flavors to meld.
  • 5. Taste & Serve: Stir well, taste, and adjust seasoning (salt, pepper, lime juice) as needed. Serve chilled, garnished with reserved fresh herbs and desired toppings.
