Ingredients
- 2 cups red grapes, halved
- 1 cup green grapes, halved
- 2 cups fresh strawberries, hulled and quartered
- 1 cup fresh blueberries
- 2 kiwis, peeled and diced
- 1 (15-ounce) can mandarin oranges, drained and rinsed
- 1 (15-ounce) can pineapple chunks, drained and rinsed
- 1 large apple, cored and diced (tossed with lemon juice if desired)
- 1 large banana, sliced (tossed with lemon juice if desired)
- For the Creamy Dressing:
- 1 cup plain full-fat Greek yogurt
- 1/4 cup sour cream (optional, for extra richness)
- 1 (3.4-ounce) package instant vanilla pudding mix (dry, not prepared)
- 2–4 tablespoons honey or maple syrup (adjust to taste)
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon lemon zest (optional, for brightness)
- Optional Garnishes:
- Fresh mint leaves
- Toasted shredded coconut
- Chopped nuts (pecans, walnuts)
Instructions
- Step 1: Prepare the Fruit: Wash all fresh fruit thoroughly and pat dry. Chop grapes, strawberries, kiwi, apple, and banana into bite-sized pieces. If using apples or bananas, toss them lightly with a squeeze of lemon juice to prevent browning. Drain and rinse canned mandarin oranges and pineapple chunks very well.
- Step 2: Make the Creamy Dressing: In a medium bowl, whisk together the Greek yogurt, sour cream (if using), dry instant vanilla pudding mix, honey (or maple syrup), vanilla extract, and lemon zest (if using) until completely smooth and lump-free. Taste and adjust sweetness as desired.
- Step 3: Gently Combine: Add all the prepared fruit to the bowl with the creamy dressing. Using a large rubber spatula, gently fold the fruit into the dressing until all pieces are lightly coated. Be careful not to bruise delicate fruits.
- Step 4: Chill: Cover the bowl tightly with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours, to allow the flavors to meld and the dressing to set.
- Step 5: Serve and Garnish: Give the salad a gentle stir before serving. Garnish with fresh mint leaves, toasted shredded coconut, or chopped nuts, if desired. Enjoy your delicious Creamy Fruit Salad!
