Ingredients
- 1 (19-ounce) package fresh or frozen cheese tortellini
- 1 pint cherry or grape tomatoes, halved
- 8 ounces fresh mozzarella balls (ciliegine or bocconcini), drained
- 1/2 cup fresh basil leaves, torn or roughly chopped
- 2–3 tablespoons extra virgin olive oil
- 2–4 tablespoons balsamic glaze (store-bought or homemade)
- Flaky sea salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Cook Tortellini: Bring a large pot of salted water to a boil. Add tortellini and cook according to package directions until al dente. Drain and rinse with cold water to cool.
- Prep Ingredients: Halve the cherry tomatoes and ensure mozzarella balls are bite-sized. Tear or chop basil.
- Assemble Salad: In a large bowl, combine cooled tortellini, halved tomatoes, and mozzarella.
- Dress and Season: Drizzle with olive oil, season with salt and pepper. Toss gently to combine.
- Finish: Add torn basil leaves and drizzle with balsamic glaze. Toss gently again. Taste and adjust seasoning as needed. Serve at room temperature.
