Ingredients

  • 1 (19-ounce) package fresh or frozen cheese tortellini
  • 1 pint cherry or grape tomatoes, halved
  • 8 ounces fresh mozzarella balls (ciliegine or bocconcini), drained
  • 1/2 cup fresh basil leaves, torn or roughly chopped
  • 23 tablespoons extra virgin olive oil
  • 24 tablespoons balsamic glaze (store-bought or homemade)
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  • Cook Tortellini: Bring a large pot of salted water to a boil. Add tortellini and cook according to package directions until al dente. Drain and rinse with cold water to cool.
  • Prep Ingredients: Halve the cherry tomatoes and ensure mozzarella balls are bite-sized. Tear or chop basil.
  • Assemble Salad: In a large bowl, combine cooled tortellini, halved tomatoes, and mozzarella.
  • Dress and Season: Drizzle with olive oil, season with salt and pepper. Toss gently to combine.
  • Finish: Add torn basil leaves and drizzle with balsamic glaze. Toss gently again. Taste and adjust seasoning as needed. Serve at room temperature.
